Fennel is a hardy, perennial and aromatic plant in the family of parsley. Fennel is considered as indigenous to the shores of the Mediterranean and also widely naturalized in the areas colonized by Romans. Nowadays, it is found growing wild in many parts of the world especially in dry soils near seas shores and riverbanks. During the Ancient Greek period, it was called as Marathon. In the Roman era, Fennel was thought of as flowers that possessed great courage and strength and was commonly mixed in the foods of Roman Gladiators to make them brave impart special power and courage.

Owing to its aromatic and flavorful properties, Fennel is widely used all over the world for culinary and medicinal applications. It is the primary ingredient of absinthe, distilled and highly alcoholic beverage. Swollen bulb like stem base of Florence fennel or Finocchio (Italian) is used as a vegetable. Fennel is an erect, perennial and green shrub that grows up to a height of 2.5 meters and has a hollow stem. Leaves are 0.5 mm wide and grow to a length of 40 cm. Flowers are 5-15 cm wide. Fruit is a grooved dry seed 4-10 mm long and 2-5 mm wide. Strongly flavored leaves and seeds of Fennel are edible.
