Asparagus is a flowering plant of lily family from which the vegetable known as asparagus is obtained. Although more than 150 species of asparagus are grown in the temperate regions of the world but only of the species is used for eating. Asparagus is widely cultivated as crop in most of the Europe, northern Africa and western Asia. Loose and sandy rich soil is best for cultivating Asparagus.

Asparagus is a perennial plant that can grow up to 100-150 cm tall with stout stems and branched feathery foliage. Needle like leaves are 6-30 mm long and 1 mm broad. Leaves are clustered in a group of 5-15. Bell shaped flowers are greenish-white to yellowish in color, 4.5-6.5 mm long and with six petals partially fused together at the base. Flowers come singly or in clusters of 2-3 at the junctions of the branches. Fruits are small red berry in a diameter of 6-10 mm. Green asparagus is used for eating all over the world, with eggs in China and with beef in Britain. Green asparagus is not considered as a delicacy as it is cheap and easy to obtain unlike white asparagus that are popular yet expensive. Nicknamed as white gold, white asparagus is a seasonal delicacy in May-June in northwestern Europe.
